- Boneless chicken breast - 250 grams
- Tortillas (flour or corn) - 2 large
- Shredded mozzarella cheese - 100 grams
- Shredded cheddar cheese - 50 grams
- Red bell pepper - 1 medium, sliced
- Jalapeño pepper - 1 small, finely chopped
- Olive oil - 1 tablespoon
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Sour cream - for serving
- Salsa - for serving
Steps
- Heat olive oil in a skillet over medium heat.
- Add the boneless chicken breast to the skillet, season with cumin, paprika, salt, and black pepper, and cook for 6-7 minutes on each side or until fully cooked. Remove from skillet and let rest for a few minutes before slicing.
- In the same skillet, add the sliced red bell pepper and chopped jalapeño. Sauté for 3-4 minutes until softened.
- On one half of each tortilla, layer the sliced chicken, sautéed peppers, mozzarella, cheddar, and chopped cilantro.
- Fold the tortillas over to create a half-moon shape.
