Ingredients
- Boneless, skinless chicken breasts - 300 grams
- Brown rice - 1 cup (200 grams)
- Chicken broth - 2 cups (500 ml)
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1 medium, diced
- Bell pepper - 1 medium, diced
- Diced tomatoes - 1 cup (240 grams)
- Chili powder - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cilantro - for garnish
Steps
- Rinse the brown rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the brown rice and chicken broth. Bring to a boil, cover, and reduce heat to low. Cook for 30 minutes, or until the rice is tender and the liquid is absorbed.
- While the rice is cooking, heat olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, and sauté for 5 minutes until softened.
- Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.
- Cut the chicken breasts into bite-sized pieces and add them to the skillet. Season with chili powder, cayenne pepper, paprika, salt, and black pepper. Cook for about 8-10 minutes, stirring occasionally, until the chicken is cooked through.
- Stir in the diced tomatoes and let simmer for an additional 5 minutes, allowing the flavors to meld together.
- Once the rice is done, fluff it with a fork and serve it on plates topped with the spicy chicken mixture.
- Garnish with fresh cilantro before serving.
