  • Chicken broth - 2 cups (500 ml)
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Diced tomatoes - 1 cup (240 grams)
  • Chili powder - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cilantro - for garnish

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, combine the brown rice and chicken broth. Bring to a boil, cover, and reduce heat to low. Cook for 30 minutes, or until the rice is tender and the liquid is absorbed.
