Ingredients

  • Cauliflower - 300 grams
  • Olive oil - 2 tablespoons

  • Red bell pepper - 50 grams, diced
  • Green onion - 2 stalks, sliced
  • Cayenne pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the cauliflower and remove the leaves and stems. Cut it into florets and pulse in a food processor until it resembles rice grains.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the diced red bell pepper and cook for an additional 2-3 minutes until softened.
