  • black beans - 400 grams (canned, drained and rinsed)
  • vegetable broth - 500 milliliters
  • red bell pepper - 1 medium, diced
  • onion - 1 medium, chopped
  • garlic - 2 cloves, minced
  • jalapeño - 1 small, minced (adjust for spice preference)
  • cumin - 1 teaspoon
  • smoked paprika - 1 teaspoon
  • olive oil - 1 tablespoon
  • lime - 1 medium, juiced
  • cilantro - 2 tablespoons, chopped (for garnish)
  • salt - to taste
  • black pepper - to taste

Steps

  1. Heat olive oil in a medium pot over medium heat.
  2. Add chopped onion and sauté for about 3-4 minutes until translucent.
  3. Stir in minced garlic, diced red bell pepper, and minced jalapeño. Cook for another 3-4 minutes.
  4. Add cumin and smoked paprika, stirring until fragrant, about 1 minute.
