- vegetable broth - 500 milliliters
- red bell pepper - 1 medium, diced
- onion - 1 medium, chopped
- garlic - 2 cloves, minced
- jalapeño - 1 small, minced (adjust for spice preference)
- cumin - 1 teaspoon
- smoked paprika - 1 teaspoon
- olive oil - 1 tablespoon
- lime - 1 medium, juiced
- cilantro - 2 tablespoons, chopped (for garnish)
- salt - to taste
- black pepper - to taste
Steps
- Heat olive oil in a medium pot over medium heat.
- Add chopped onion and sauté for about 3-4 minutes until translucent.
- Stir in minced garlic, diced red bell pepper, and minced jalapeño. Cook for another 3-4 minutes.
- Add cumin and smoked paprika, stirring until fragrant, about 1 minute.
