- Red bell pepper - 1 medium
- Zucchini - 1 medium

- Apple cider vinegar - 1 tablespoon
- Smoked paprika - 1 teaspoon
- Garlic powder - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Wooden skewers - 4 (soaked in water for 30 minutes)
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut into 2.5 cm cubes.
- Chop the red bell pepper, zucchini, and red onion into similar-sized pieces as the tofu.
- In a bowl, whisk together olive oil, soy sauce, maple syrup, apple cider vinegar, smoked paprika, garlic powder, cayenne pepper, and black pepper to create the marinade.
- Add the tofu cubes and chopped vegetables to the marinade, tossing gently to coat. Let marinate for at least 10 minutes.
- Preheat the grill or grill pan over medium-high heat.
- Thread the marinated tofu and vegetables onto the soaked skewers, alternating between tofu and vegetables.
- Grill the skewers for 10-12 minutes, turning occasionally, until the tofu is golden and the vegetables are tender.
