  • Ground antelope meat - 500 grams
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Crushed red pepper flakes - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Fresh parsley, chopped - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Natural hog casings - 2 meters (optional for sausage casing)

Steps

  1. In a large mixing bowl, combine the ground antelope meat, garlic powder, onion powder, smoked paprika, crushed red pepper flakes, cayenne pepper, black pepper, salt, and chopped parsley. Mix well until all ingredients are evenly distributed.
  2. If using hog casings, rinse them thoroughly in cold water and soak in warm water for about 30 minutes.
  3. Using a sausage stuffer, fill the casings with the meat mixture, twisting them into 15 cm links. If not using casings, simply form the mixture into patties.
  4. Heat a grill or skillet over medium-high heat and add olive oil to prevent sticking.
  5. Cook the sausages for about 10-12 minutes, turning occasionally, until they are browned and cooked through, with an internal temperature of 70°C (160°F).
