Ingredients

  • Basmati rice - 1 cup (200g)
  • Water - 1.5 cups (360ml)
  • Olive oil - 1 tablespoon (15ml)
  • Onion, finely chopped - 1 small (about 100g)
  • Garlic, minced - 2 cloves
  • Cinnamon stick - 1
  • Ground cumin - 1 teaspoon (2g)
  • Ground coriander - 1 teaspoon (2g)
  • Salt - 1/2 teaspoon (3g)
  • Black pepper - 1/4 teaspoon (1g)
  • Raisins - 1/4 cup (40g)
  • Pine nuts, toasted - 2 tablespoons (30g)
  • Fresh parsley, chopped - 2 tablespoons (8g)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, cinnamon stick, ground cumin, ground coriander, salt, and black pepper to the onions. Stir and cook for 1-2 minutes until fragrant.
  4. Drain the soaked rice and add it to the saucepan, stirring well to coat the rice with the spices.
  5. Pour in the 1.5 cups of water and bring to a boil. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes.
  6. After 15 minutes, remove the saucepan from the heat and let it sit, covered, for an additional 5 minutes.
  7. Remove the cinnamon stick and fluff the rice with a fork. Gently fold in the raisins and toasted pine nuts.
  8. Serve warm, garnished with fresh chopped parsley.
