- Onion, finely chopped - 1 small (about 100g)
- Garlic, minced - 2 cloves
- Cinnamon stick - 1
- Ground cumin - 1 teaspoon (2g)
- Ground coriander - 1 teaspoon (2g)
- Salt - 1/2 teaspoon (3g)
- Black pepper - 1/4 teaspoon (1g)
- Raisins - 1/4 cup (40g)
- Pine nuts, toasted - 2 tablespoons (30g)
- Fresh parsley, chopped - 2 tablespoons (8g)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, cinnamon stick, ground cumin, ground coriander, salt, and black pepper to the onions. Stir and cook for 1-2 minutes until fragrant.
- Drain the soaked rice and add it to the saucepan, stirring well to coat the rice with the spices.
- Pour in the 1.5 cups of water and bring to a boil. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes.
- After 15 minutes, remove the saucepan from the heat and let it sit, covered, for an additional 5 minutes.
- Remove the cinnamon stick and fluff the rice with a fork. Gently fold in the raisins and toasted pine nuts.
- Serve warm, garnished with fresh chopped parsley.
