Ingredients

  • Basmati rice - 1 cup (200g)
  • Vegetable broth - 1.5 cups (360ml)
  • Olive oil - 1 tablespoon (15ml)
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1/2, diced
  • Carrot - 1 medium, diced
  • Peas - 1/2 cup (75g), frozen or fresh
  • Ground cumin - 1 teaspoon (2g)
  • Ground coriander - 1 teaspoon (2g)
  • Paprika - 1/2 teaspoon (1g)
  • Turmeric - 1/4 teaspoon (0.5g)
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak in water for 15 minutes.
  2. In a medium saucepan, heat olive oil over medium heat. Add chopped onion and sauté for 3-4 minutes until translucent.
  3. Stir in minced garlic, diced red bell pepper, and carrot. Cook for another 5 minutes until the vegetables soften.
  4. Add the drained rice to the saucepan and stir to coat in the oil and vegetables, cooking for an additional 2 minutes.
  5. Sprinkle in the ground cumin, coriander, paprika, turmeric, salt, and black pepper. Mix well to combine.
  6. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes, or until the rice is tender and the liquid is absorbed.
  7. During the last 5 minutes of cooking, add the peas to the rice and cover again to heat through.
  8. Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and garnish with fresh parsley before serving.
