- Basmati rice - 1 cup (200g)
- Vegetable broth - 1.5 cups (360ml)
- Olive oil - 1 tablespoon (15ml)
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Red bell pepper - 1/2, diced
- Carrot - 1 medium, diced
- Peas - 1/2 cup (75g), frozen or fresh
- Ground cumin - 1 teaspoon (2g)
- Ground coriander - 1 teaspoon (2g)
- Paprika - 1/2 teaspoon (1g)
- Turmeric - 1/4 teaspoon (0.5g)
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak in water for 15 minutes.
- In a medium saucepan, heat olive oil over medium heat. Add chopped onion and sauté for 3-4 minutes until translucent.
- Stir in minced garlic, diced red bell pepper, and carrot. Cook for another 5 minutes until the vegetables soften.
- Add the drained rice to the saucepan and stir to coat in the oil and vegetables, cooking for an additional 2 minutes.
- Sprinkle in the ground cumin, coriander, paprika, turmeric, salt, and black pepper. Mix well to combine.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes, or until the rice is tender and the liquid is absorbed.
- During the last 5 minutes of cooking, add the peas to the rice and cover again to heat through.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and garnish with fresh parsley before serving.
