Ingredients

  • Brown lentils - 100 grams
  • Water - 500 ml
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 medium, diced
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 30 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the brown lentils under cold water and place them in a saucepan with 500 ml of water.
  2. Bring the water to a boil, then reduce the heat and simmer for 20-25 minutes until the lentils are tender but not mushy.
  3. While the lentils are cooking, prepare the vegetables: halve the cherry tomatoes, dice the cucumber, and finely chop the red onion and parsley.
  4. In a small bowl, whisk together the olive oil, lemon juice, ground cumin, paprika, salt, and black pepper to create the dressing.
  5. Once the lentils are cooked, drain any excess water and let them cool for a few minutes.
  6. In a large bowl, combine the cooked lentils, cherry tomatoes, cucumber, red onion, and parsley.
  7. Pour the dressing over the lentil salad and toss gently to combine all the ingredients.
  8. Serve the salad at room temperature or chilled.
