- Brown lentils - 100 grams
- Water - 500 ml
- Cherry tomatoes - 100 grams, halved
- Cucumber - 1 medium, diced
- Red onion - 1 small, finely chopped
- Fresh parsley - 30 grams, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Rinse the brown lentils under cold water and place them in a saucepan with 500 ml of water.
- Bring the water to a boil, then reduce the heat and simmer for 20-25 minutes until the lentils are tender but not mushy.
- While the lentils are cooking, prepare the vegetables: halve the cherry tomatoes, dice the cucumber, and finely chop the red onion and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, ground cumin, paprika, salt, and black pepper to create the dressing.
- Once the lentils are cooked, drain any excess water and let them cool for a few minutes.
- In a large bowl, combine the cooked lentils, cherry tomatoes, cucumber, red onion, and parsley.
