Steps
- Rinse the long-grain rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat the olive oil over medium heat and sauté the diced onion until translucent, about 3-4 minutes.
- Add the minced garlic and diced red bell pepper to the pan, cooking for an additional 2-3 minutes until the pepper softens.
- Stir in the rinsed rice and cook, stirring frequently, for about 2-3 minutes until the rice is slightly toasted.
- Add the vegetable broth, ground cumin, paprika, salt, and black pepper to the saucepan, bringing the mixture to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes.
- After 15 minutes, add the frozen green peas and diced tomato, stir gently, cover, and cook for an additional 5 minutes until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork, garnish with chopped cilantro, and serve.
