Ingredients

  • Spaghetti - 200 grams
  • Pancetta - 100 grams, diced
  • Eggs - 2 large
  • Parmesan cheese - 50 grams, grated
  • Greek yogurt - 50 grams
  • Garlic - 1 clove, minced
  • Black pepper - to taste
  • Salt - to taste
  • Fresh parsley - for garnish, chopped

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. While the pasta is cooking, heat a skillet over medium heat and add the diced pancetta. Cook until crispy, about 5-7 minutes.
  3. Add minced garlic to the skillet and sauté for an additional minute until fragrant.
  4. In a bowl, whisk together the eggs, grated Parmesan cheese, Greek yogurt, and a generous amount of black pepper.
  5. Once the pasta is cooked, reserve about 1 cup of the pasta water, then drain the spaghetti.
  6. Quickly add the hot spaghetti to the skillet with the pancetta and garlic, tossing to combine.
  7. Remove the skillet from heat and immediately pour the egg mixture over the pasta, stirring quickly to create a creamy sauce. If needed, add reserved pasta water a little at a time to reach desired creaminess.
  8. Season with salt and additional black pepper to taste, and garnish with chopped parsley before serving.
