- 2 large bell peppers (any color) - 400 grams
- 1 cup cooked quinoa - 170 grams
- 1 can (400 grams) black beans, drained and rinsed - 240 grams
- 1 medium onion, diced - 150 grams
- 1 clove garlic, minced - 3 grams
- 1 teaspoon ground cumin - 2 grams
- 1 teaspoon chili powder - 2 grams
- 1 teaspoon smoked paprika - 2 grams
- 1/2 cup corn kernels (frozen or canned) - 75 grams
- 1/2 cup diced tomatoes (canned or fresh) - 120 grams
- 1/4 cup shredded cheddar cheese (optional) - 30 grams
- Salt and pepper to taste - 1 gram
- Fresh cilantro for garnish - 5 grams
Steps
- Preheat the oven to 190°C (375°F).
- Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
- In a skillet over medium heat, add a splash of water or oil and sauté the diced onion for about 5 minutes until soft.
- Add minced garlic, ground cumin, chili powder, and smoked paprika to the skillet, cooking for another minute until fragrant.
- Stir in the cooked quinoa, black beans, corn, and diced tomatoes, mixing well. Season with salt and pepper to taste.
- Fill each bell pepper with the quinoa mixture, pressing down gently to pack it in. If using, sprinkle the tops with shredded cheddar cheese.
- Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the peppers are tender and the cheese is melted.
- Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro before serving.
