  • Red bell pepper - 1, sliced
  • Green bell pepper - 1, sliced
  • Red onion - 1/2, thinly sliced
  • Chipotle sauce - 2 tablespoons
  • Shredded mozzarella cheese - 150 grams
  • Olive oil - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Cilantro - 2 tablespoons, chopped (for garnish)

  • Black pepper - to taste

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a skillet, heat olive oil over medium heat, then add sliced chorizo and cook until browned, about 5 minutes.
  3. Add the sliced red and green bell peppers and red onion to the skillet and sauté for another 5 minutes until softened.
  4. Stir in cumin powder, salt, and black pepper, and cook for an additional 2 minutes. Remove from heat.
