  • Quinoa - 100 grams
  • Black beans - 200 grams (canned, drained and rinsed)
  • Corn - 100 grams (canned or frozen)
  • Red bell pepper - 1 medium, diced
  • Green onion - 2 stalks, chopped
  • Cilantro - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Flour (whole wheat or all-purpose) - 3 tablespoons
  • Olive oil - 2 tablespoons (for cooking)
  • Burger buns - 2
  • Avocado - 1, sliced (for topping)
  • Lettuce - 2 leaves (for serving)
  • Tomato - 1 medium, sliced (for serving)

Steps

  1. Rinse the quinoa under cold water, then cook it in a pot with 200 ml of water. Bring to a boil, reduce the heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy and water is absorbed.
  2. In a large mixing bowl, combine the cooked quinoa, black beans, corn, diced red bell pepper, green onion, cilantro, cumin, chili powder, garlic powder, salt, and black pepper. Mix until well combined.
  3. Add the flour to the mixture and stir until the ingredients come together to form a thick batter. If too wet, add a little more flour.
  4. Divide the mixture into two equal portions and shape them into patties.
  5. Heat olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for 5-7 minutes on each side until golden brown and crispy.
  6. Toast the burger buns in the skillet for 1-2 minutes until lightly browned.
  7. Assemble the burgers by placing a patty on each bun, topped with sliced avocado, lettuce, and tomato.
