Ingredients
- Quinoa - 100 grams
- Black beans - 200 grams (canned, drained and rinsed)
- Corn - 100 grams (canned or frozen)
- Red bell pepper - 1 medium, diced
- Green onion - 2 stalks, chopped
- Cilantro - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Garlic powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Flour (whole wheat or all-purpose) - 3 tablespoons
- Olive oil - 2 tablespoons (for cooking)
- Burger buns - 2
- Avocado - 1, sliced (for topping)
- Lettuce - 2 leaves (for serving)
- Tomato - 1 medium, sliced (for serving)
Steps
- Rinse the quinoa under cold water, then cook it in a pot with 200 ml of water. Bring to a boil, reduce the heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy and water is absorbed.
- In a large mixing bowl, combine the cooked quinoa, black beans, corn, diced red bell pepper, green onion, cilantro, cumin, chili powder, garlic powder, salt, and black pepper. Mix until well combined.
- Add the flour to the mixture and stir until the ingredients come together to form a thick batter. If too wet, add a little more flour.
- Divide the mixture into two equal portions and shape them into patties.
- Heat olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for 5-7 minutes on each side until golden brown and crispy.
- Toast the burger buns in the skillet for 1-2 minutes until lightly browned.
- Assemble the burgers by placing a patty on each bun, topped with sliced avocado, lettuce, and tomato.
- Serve immediately and enjoy your Southwestern Quinoa Burger!
