  • 200 g chicken breast - boneless and skinless

  • 1/2 cup cherry tomatoes - halved
  • 1/2 cup black beans - rinsed and drained
  • 1/4 cup corn - canned or fresh
  • 1/4 cup red bell pepper - diced
  • 1/4 cup avocado - diced
  • 2 tablespoons cilantro - chopped
  • 1/4 cup Greek yogurt - plain
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt - to taste
  • Pepper - to taste
  • 1 tablespoon olive oil

Steps

  1. Heat the olive oil in a skillet over medium heat.
  2. Season the chicken breast with chili powder, cumin, salt, and pepper.
  3. Cook the chicken in the skillet for about 5-7 minutes on each side, or until fully cooked (internal temperature should reach 75°C).
  4. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.
  5. In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, black beans, corn, red bell pepper, avocado, and cilantro.
  6. In a small bowl, mix together the Greek yogurt, lime juice, and a pinch of salt for the dressing.
