- Cauliflower - 300 grams
- Shredded mozzarella cheese - 150 grams
- Cream cheese - 50 grams
- Egg - 1 large
- Cooked chicken breast, shredded - 200 grams
- Olive oil - 1 tablespoon
- Red bell pepper, diced - 1/2
- Green bell pepper, diced - 1/2
- Taco seasoning - 1 tablespoon
- Avocado - 1 medium
- Lime juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 220°C (425°F).
- In a food processor, pulse the cauliflower until it resembles rice, then steam it for 4-5 minutes until tender. Allow to cool slightly.
- In a mixing bowl, combine the steamed cauliflower, shredded mozzarella, cream cheese, and egg. Mix until well combined.
- Spread the cauliflower mixture onto a baking sheet lined with parchment paper, forming a round pizza crust. Bake for 15-20 minutes until golden and firm.
- While the crust is baking, heat olive oil in a skillet over medium heat, add the diced red and green bell peppers, and sauté for about 5 minutes.
- Add the shredded chicken and taco seasoning to the skillet, stirring until the chicken is heated through and coated well, about 3-4 minutes.
- In a separate bowl, mash the avocado and mix in lime juice, salt, and black pepper to create the avocado sauce.
- Once the crust is ready, remove it from the oven and top it with the chicken and bell pepper mixture, followed by a drizzle of avocado sauce.
- Return to the oven for an additional 5 minutes to warm through, then slice and serve.
