Ingredients

  • Cauliflower - 300 grams
  • Shredded mozzarella cheese - 150 grams
  • Cream cheese - 50 grams
  • Egg - 1 large
  • Cooked chicken breast, shredded - 200 grams
  • Olive oil - 1 tablespoon
  • Red bell pepper, diced - 1/2
  • Green bell pepper, diced - 1/2
  • Taco seasoning - 1 tablespoon
  • Avocado - 1 medium
  • Lime juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a food processor, pulse the cauliflower until it resembles rice, then steam it for 4-5 minutes until tender. Allow to cool slightly.
  3. In a mixing bowl, combine the steamed cauliflower, shredded mozzarella, cream cheese, and egg. Mix until well combined.
  4. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, forming a round pizza crust. Bake for 15-20 minutes until golden and firm.
  5. While the crust is baking, heat olive oil in a skillet over medium heat, add the diced red and green bell peppers, and sauté for about 5 minutes.
  6. Add the shredded chicken and taco seasoning to the skillet, stirring until the chicken is heated through and coated well, about 3-4 minutes.
  7. In a separate bowl, mash the avocado and mix in lime juice, salt, and black pepper to create the avocado sauce.
  8. Once the crust is ready, remove it from the oven and top it with the chicken and bell pepper mixture, followed by a drizzle of avocado sauce.
  9. Return to the oven for an additional 5 minutes to warm through, then slice and serve.
