- Red onion - 50 grams, diced
- Red bell pepper - 100 grams, diced
- Corn kernels - 100 grams, fresh or canned
- Ground cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Garlic powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Vegan cheese - 100 grams (optional)
- Avocado - 1 small, sliced (for topping)
Steps
- Preheat your oven to 220°C (428°F).
- Roll out the whole wheat pizza dough on a lightly floured surface to your desired thickness.
- Transfer the rolled dough onto a baking sheet lined with parchment paper.
- In a skillet, heat olive oil over medium heat. Add the diced red onion and red bell pepper, sautéing for about 5 minutes until softened.
- Stir in the black beans, corn, ground cumin, smoked paprika, garlic powder, salt, and black pepper. Cook for another 3-4 minutes until heated through.
- Spread the black bean mixture evenly over the pizza dough.
