  • Canned black beans - 200 grams, rinsed and drained
  • Olive oil - 1 tablespoon
  • Red onion - 50 grams, diced
  • Red bell pepper - 100 grams, diced
  • Corn kernels - 100 grams, fresh or canned
  • Ground cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Vegan cheese - 100 grams (optional)
  • Avocado - 1 small, sliced (for topping)

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Roll out the whole wheat pizza dough on a lightly floured surface to your desired thickness.
  3. Transfer the rolled dough onto a baking sheet lined with parchment paper.
  4. In a skillet, heat olive oil over medium heat. Add the diced red onion and red bell pepper, sautéing for about 5 minutes until softened.
  5. Stir in the black beans, corn, ground cumin, smoked paprika, garlic powder, salt, and black pepper. Cook for another 3-4 minutes until heated through.
  6. Spread the black bean mixture evenly over the pizza dough.
  7. If using, sprinkle the vegan cheese on top of the black bean mixture.
