- Red cabbage - 1 cup (shredded)
- Carrot - 1 medium (shredded)
- Fresh cilantro - 1/4 cup (chopped)
- Lime - 1 (juiced)
- BBQ sauce - 1/4 cup (60 ml)
- Olive oil - 1 tablespoon (15 ml)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the grill or a grill pan over medium-high heat.
- Season the chicken breast with olive oil, salt, and black pepper, then grill for about 6-7 minutes per side, or until fully cooked (internal temperature should reach 75°C).
- In a mixing bowl, combine the shredded red cabbage, shredded carrot, chopped cilantro, lime juice, and a pinch of salt, then toss to create the slaw.
- Once the chicken is cooked, remove it from the grill and let it rest for 5 minutes, then slice it into thin strips.
- Warm the corn tortillas on the grill for about 30 seconds on each side.
- Assemble the tacos by placing a portion of sliced grilled chicken on each tortilla, adding a spoonful of black beans, and topping it with the cilantro slaw.
- Drizzle BBQ sauce over the tacos before serving.
