  • Black beans - 1/2 cup, drained and rinsed
  • Corn kernels - 1/2 cup, fresh or canned
  • Fresh cilantro - 1/4 cup, chopped
  • Lime juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Prepare all the ingredients by washing and chopping the vegetables: halve the cherry tomatoes, finely chop the red onion, and dice the cucumber.
  2. In a large mixing bowl, combine the halved cherry tomatoes, chopped red onion, diced cucumber, black beans, corn kernels, and chopped cilantro.
