Ingredients

  • Chicken pieces (bone-in, skin-on) - 500 grams
  • Buttermilk - 1 cup (240 ml)
  • Hot sauce - 1 tablespoon
  • All-purpose flour - 1 cup (120 grams)
  • Paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Salt - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Vegetable oil (for frying) - 2 cups (480 ml)

Steps

  1. In a large bowl, combine buttermilk and hot sauce. Add chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.
  2. In a separate bowl, mix together flour, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper.
  3. Remove chicken from buttermilk marinade and let excess liquid drip off. Dredge each piece in the flour mixture, pressing lightly to adhere.
  4. Heat vegetable oil in a deep skillet or fryer over medium-high heat until it reaches 175°C (350°F).
  5. Carefully add chicken pieces to the hot oil, ensuring not to overcrowd the pan. Fry for about 12-15 minutes, turning occasionally until golden brown and cooked through (internal temperature should reach 75°C or 165°F).
  6. Remove chicken from oil and place on a paper towel-lined plate to drain excess oil. Let rest for a few minutes before serving.
