Ingredients
- Chicken pieces (bone-in, skin-on) - 500 grams
- Buttermilk - 1 cup (240 ml)
- Hot sauce - 1 tablespoon
- All-purpose flour - 1 cup (120 grams)
- Paprika - 1 teaspoon
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Black pepper - 1 teaspoon
- Salt - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Vegetable oil (for frying) - 2 cups (480 ml)
Steps
- In a large bowl, combine buttermilk and hot sauce. Add chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.
- In a separate bowl, mix together flour, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper.
- Remove chicken from buttermilk marinade and let excess liquid drip off. Dredge each piece in the flour mixture, pressing lightly to adhere.
- Heat vegetable oil in a deep skillet or fryer over medium-high heat until it reaches 175°C (350°F).
- Carefully add chicken pieces to the hot oil, ensuring not to overcrowd the pan. Fry for about 12-15 minutes, turning occasionally until golden brown and cooked through (internal temperature should reach 75°C or 165°F).
- Remove chicken from oil and place on a paper towel-lined plate to drain excess oil. Let rest for a few minutes before serving.
