Ingredients

  • Potatoes - 500 grams
  • Dijon mustard - 2 tablespoons
  • Apple cider vinegar - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Celery - 50 grams, finely chopped
  • Red onion - 50 grams, finely chopped
  • Fresh dill - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Green onions - 2, chopped

Steps

  1. Wash the potatoes thoroughly and cut them into cubes, leaving the skin on for added texture.
  2. Place the potato cubes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil.
  3. Reduce heat and let the potatoes simmer for about 15-20 minutes, or until they are tender but not falling apart. Drain and let them cool.
  4. In a small bowl, whisk together the Dijon mustard, apple cider vinegar, olive oil, salt, black pepper, and paprika to create the dressing.
  5. In a large bowl, combine the cooled potatoes, celery, red onion, dill, and green onions.
  6. Pour the dressing over the potato mixture and gently toss to coat all the ingredients evenly.
  7. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
