- Quick-cooking grits - 1 cup
- Water - 2 cups
- Milk - 1/2 cup
- Eggs - 2 large
- Cooked and crumbled turkey sausage - 100 grams
- Shredded cheddar cheese - 1/2 cup
- Green onions - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
Steps
- In a medium saucepan, bring 2 cups of water to a boil. Add 1/2 teaspoon of salt and gradually stir in the grits.
- Reduce the heat to low, cover, and cook for 5 minutes, stirring occasionally until thickened.
- Stir in 1/2 cup of milk and cook for an additional 2 minutes, then remove from heat and stir in 1/2 cup of shredded cheddar cheese until melted.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the cooked turkey sausage and cook until heated through, about 2-3 minutes.
- In a separate pan, fry the two eggs to your liking (sunny-side up or over-easy).
- To assemble, divide the cheesy grits into two bowls, top each with the crumbled turkey sausage, a fried egg, and garnish with chopped green onions.
- Season with black pepper to taste and serve immediately.
