Ingredients

  • Fresh oysters - 12 large
  • Cornmeal - 1/2 cup
  • Almond flour - 1/4 cup
  • Paprika - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Egg - 1 large
  • Milk - 1/4 cup
  • Vegetable oil - for frying

Steps

  1. Shuck the oysters and remove any shell fragments, then place them in a bowl of cold water for 10 minutes to clean.
  2. In a shallow dish, combine cornmeal, almond flour, paprika, garlic powder, salt, and black pepper.
  3. In another bowl, whisk together the egg and milk until well combined.
  4. Heat vegetable oil in a deep skillet or frying pan over medium-high heat, ensuring there is enough oil to submerge the oysters halfway.
  5. Dip each oyster first into the egg mixture, allowing excess to drip off, then coat it in the cornmeal mixture, pressing lightly to adhere.
  6. Once the oil is hot (about 180°C or 350°F), carefully add the oysters in batches to avoid overcrowding the pan.
  7. Fry for about 2-3 minutes on each side or until they are golden brown and crispy.
  8. Remove the fried oysters with a slotted spoon and drain on paper towels. Serve immediately with your favorite dipping sauce.
