Ingredients

  • Chicken thighs - 300 grams
  • Buttermilk - 120 ml
  • Gluten-free all-purpose flour - 100 grams
  • Cornstarch - 50 grams
  • Paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Egg - 1 large
  • Gluten-free burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Pickles - 4 slices
  • Mayonnaise - 2 tablespoons
  • Cooking oil - for frying

Steps

  1. In a bowl, marinate the chicken thighs in buttermilk for at least 1 hour or overnight in the refrigerator.
  2. In another bowl, mix the gluten-free flour, cornstarch, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
  3. Remove the chicken from the buttermilk and let the excess drip off. Dip each piece into the flour mixture, ensuring it is fully coated.
  4. Beat the egg in a small bowl and dip the coated chicken back into the egg, then return it to the flour mixture for a second coating.
  5. Heat oil in a frying pan over medium-high heat. Once hot, carefully add the chicken pieces and fry for about 5-7 minutes on each side or until golden brown and cooked through.
  6. While the chicken is frying, toast the gluten-free burger buns lightly in a separate pan or toaster.
  7. Assemble the burgers by spreading mayonnaise on the bottom bun, then adding lettuce, the fried chicken, sliced tomato, and pickles. Top with the other half of the bun.
  8. Serve immediately and enjoy your Southern Fried Chicken Burgers!
