  • Cornstarch - 50g
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Vegetable oil - 500ml (for frying)

Steps

  1. In a large bowl, combine the buttermilk, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper. Add the chicken thighs, ensuring they are fully submerged, and refrigerate for at least 30 minutes (up to overnight for more flavor).
  2. In a separate bowl, mix the rice flour and cornstarch together. This will be your dredging mixture.
  3. Heat the vegetable oil in a deep skillet or frying pan over medium-high heat until it reaches 180°C (350°F).
  4. Remove the chicken from the buttermilk marinade, allowing excess to drip off, then dredge each piece in the rice flour mixture, pressing lightly to ensure a good coating.
  5. Carefully place the coated chicken pieces into the hot oil, frying in batches if necessary to avoid crowding. Fry for about 8-10 minutes on each side, or until the chicken is golden brown and reaches an internal temperature of 75°C (165°F).
