Ingredients

  • catfish fillets - 300 grams
  • buttermilk - 1 cup (240 ml)
  • cornmeal - 1 cup (120 grams)
  • all-purpose gluten-free flour - 1/2 cup (60 grams)
  • cajun seasoning - 1 tablespoon
  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • cooking oil (for frying) - 500 ml
  • lemon wedges - 2 (for serving)
  • fresh parsley (chopped) - 1 tablespoon (for garnish)

Steps

  1. In a shallow bowl, soak the catfish fillets in buttermilk for at least 15 minutes.
  2. In another bowl, mix the cornmeal, gluten-free flour, cajun seasoning, salt, and black pepper.
  3. Heat the cooking oil in a deep skillet over medium-high heat until it reaches 180°C (350°F).
  4. Remove the catfish from the buttermilk, allowing excess to drip off, and dredge each fillet in the cornmeal mixture, pressing gently to adhere.
  5. Carefully place the coated fillets in the hot oil, frying for 4-5 minutes on each side or until golden brown and cooked through.
  6. Remove the catfish from the oil and drain on paper towels.
  7. Serve hot with lemon wedges and garnish with fresh parsley.
