- cornmeal - 1 cup (120 grams)
- all-purpose gluten-free flour - 1/2 cup (60 grams)
- cajun seasoning - 1 tablespoon
- salt - 1 teaspoon
- black pepper - 1/2 teaspoon
- cooking oil (for frying) - 500 ml
- lemon wedges - 2 (for serving)
- fresh parsley (chopped) - 1 tablespoon (for garnish)
Steps
- In a shallow bowl, soak the catfish fillets in buttermilk for at least 15 minutes.
- In another bowl, mix the cornmeal, gluten-free flour, cajun seasoning, salt, and black pepper.
- Heat the cooking oil in a deep skillet over medium-high heat until it reaches 180°C (350°F).
- Remove the catfish from the buttermilk, allowing excess to drip off, and dredge each fillet in the cornmeal mixture, pressing gently to adhere.
- Carefully place the coated fillets in the hot oil, frying for 4-5 minutes on each side or until golden brown and cooked through.
