- Green onions, sliced - 2 for garnish
Steps
- Rinse the brown rice under cold water until the water runs clear, then combine it with the vegetable broth in a saucepan. Bring to a boil, reduce heat, cover, and simmer for 30 minutes or until the rice is tender and the liquid is absorbed.
- While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the diced onion, celery, and green bell pepper. Sauté for about 5 minutes until the vegetables are softened.
- Add the minced garlic and grated carrot to the skillet, cooking for an additional 2 minutes until fragrant.
- Stir in the chopped mushrooms, Cajun seasoning, smoked paprika, black pepper, and salt. Cook for about 5 more minutes until the mushrooms are tender and any liquid has evaporated.
- Once the rice is cooked, add it to the skillet with the vegetable mixture. Stir well to combine and heat through for another 2-3 minutes.
- Remove from heat and stir in the chopped parsley. Adjust seasoning if necessary.
- Serve hot, garnished with sliced green onions.
