  • Green bell pepper, diced - 1 medium

  • Carrot, grated - 1 medium
  • Mushrooms, chopped - 1 cup
  • Cajun seasoning - 1 tablespoon
  • Smoked paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Fresh parsley, chopped - 2 tablespoons
  • Green onions, sliced - 2 for garnish

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then combine it with the vegetable broth in a saucepan. Bring to a boil, reduce heat, cover, and simmer for 30 minutes or until the rice is tender and the liquid is absorbed.
  2. While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the diced onion, celery, and green bell pepper. Sauté for about 5 minutes until the vegetables are softened.
  3. Add the minced garlic and grated carrot to the skillet, cooking for an additional 2 minutes until fragrant.
  4. Stir in the chopped mushrooms, Cajun seasoning, smoked paprika, black pepper, and salt. Cook for about 5 more minutes until the mushrooms are tender and any liquid has evaporated.
  5. Once the rice is cooked, add it to the skillet with the vegetable mixture. Stir well to combine and heat through for another 2-3 minutes.
  6. Remove from heat and stir in the chopped parsley. Adjust seasoning if necessary.
  7. Serve hot, garnished with sliced green onions.
