Ingredients

  • Collard greens - 200 grams
  • Bacon - 50 grams, diced
  • Chicken broth - 250 ml
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Apple cider vinegar - 1 tablespoon
  • Red pepper flakes - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the collard greens thoroughly under cold water and remove the tough stems, then chop them into bite-sized pieces.
  2. In a large skillet, cook the diced bacon over medium heat until crispy, about 5-7 minutes. Remove the bacon from the skillet and set aside, leaving the rendered fat.
  3. Add the olive oil to the skillet with the bacon fat, and then add the chopped onion and sauté until translucent, about 3-4 minutes.
  4. Stir in the minced garlic and red pepper flakes, cooking for an additional 1-2 minutes until fragrant.
  5. Add the chopped collard greens to the skillet, mixing well with the onion and garlic mixture.
  6. Pour in the chicken broth and add the apple cider vinegar. Season with salt and black pepper to taste.
  7. Cover the skillet and let the collard greens simmer for about 15-20 minutes, until they are tender and flavorful.
  8. Stir in the crispy bacon before serving.
