- All-purpose flour - 200 grams
- Baking powder - 10 grams
- Salt - 5 grams
- Unsalted butter - 60 grams, cold and cubed
- Milk - 150 milliliters
- Olive oil - 1 tablespoon
- Mushrooms - 200 grams, chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 200 milliliters
- Milk (for gravy) - 100 milliliters
- Black pepper - 1 teaspoon
- Dried thyme - 1 teaspoon
- Cornstarch - 1 tablespoon (optional for thickening)
Steps
- Preheat your oven to 220°C (425°F).
- In a large bowl, whisk together the flour, baking powder, and salt.
- Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
- Pour in the milk gradually, stirring until just combined. Do not overmix.
- Turn the dough onto a floured surface and gently knead it a few times until it comes together. Pat it down to about 2.5 cm thick.
- Cut out biscuits using a round cutter and place them on a baking sheet lined with parchment paper.
- Bake the biscuits in the preheated oven for 12-15 minutes or until golden brown.
- While the biscuits are baking, heat olive oil in a skillet over medium heat. Add the chopped mushrooms and sauté until they release their moisture and begin to brown, about 5-7 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Pour in the vegetable broth and bring to a simmer. Stir in the milk, black pepper, and dried thyme, cooking for another 5 minutes.
- If you prefer a thicker gravy, mix cornstarch with a little water to create a slurry and add it to the skillet, stirring until the gravy thickens.
- Once the biscuits are done, split them open and ladle the mushroom gravy over the top. Serve warm.
