Ingredients

  • Milk - 150 milliliters
  • Olive oil - 1 tablespoon
  • Mushrooms - 200 grams, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 200 milliliters
  • Milk (for gravy) - 100 milliliters
  • Black pepper - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Cornstarch - 1 tablespoon (optional for thickening)

Steps

  1. Preheat your oven to 220°C (425°F).
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  4. Pour in the milk gradually, stirring until just combined. Do not overmix.
  5. Turn the dough onto a floured surface and gently knead it a few times until it comes together. Pat it down to about 2.5 cm thick.
  6. Cut out biscuits using a round cutter and place them on a baking sheet lined with parchment paper.
  7. Bake the biscuits in the preheated oven for 12-15 minutes or until golden brown.
  8. While the biscuits are baking, heat olive oil in a skillet over medium heat. Add the chopped mushrooms and sauté until they release their moisture and begin to brown, about 5-7 minutes.
  9. Add the minced garlic and cook for an additional minute until fragrant.
  10. Pour in the vegetable broth and bring to a simmer. Stir in the milk, black pepper, and dried thyme, cooking for another 5 minutes.
  11. If you prefer a thicker gravy, mix cornstarch with a little water to create a slurry and add it to the skillet, stirring until the gravy thickens.
  12. Once the biscuits are done, split them open and ladle the mushroom gravy over the top. Serve warm.
