Ingredients

  • Shrimp (peeled and deveined) - 300 grams
  • Stone-ground grits - 100 grams
  • Chicken broth - 500 milliliters
  • Butter - 30 grams
  • Cheddar cheese (shredded) - 50 grams
  • Garlic (minced) - 2 cloves
  • Green onions (sliced) - 2 stalks
  • Bacon (chopped) - 50 grams
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium saucepan, bring the chicken broth to a boil. Slowly whisk in the stone-ground grits, reduce the heat to low, and cook for about 20 minutes, stirring occasionally until thickened.
  2. While the grits are cooking, in a skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.
  3. In the same skillet, add the minced garlic and cook for about 1 minute until fragrant. Add the shrimp, paprika, cayenne pepper, salt, and black pepper. Sauté until the shrimp are pink and cooked through, about 4-5 minutes.
  4. Stir in the lemon juice and half of the sliced green onions into the shrimp mixture.
  5. Once the grits are done cooking, remove from heat and stir in the butter and shredded cheddar cheese until melted and creamy.
  6. To serve, spoon the cheesy grits onto plates, top with the shrimp mixture, and sprinkle with the remaining green onions and crispy bacon.
