- Stone-ground grits - 100 grams
- Chicken broth - 500 milliliters
- Butter - 30 grams
- Cheddar cheese (shredded) - 50 grams
- Garlic (minced) - 2 cloves
- Green onions (sliced) - 2 stalks
- Bacon (chopped) - 50 grams
- Paprika - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- In a medium saucepan, bring the chicken broth to a boil. Slowly whisk in the stone-ground grits, reduce the heat to low, and cook for about 20 minutes, stirring occasionally until thickened.
- While the grits are cooking, in a skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.
- In the same skillet, add the minced garlic and cook for about 1 minute until fragrant. Add the shrimp, paprika, cayenne pepper, salt, and black pepper. Sauté until the shrimp are pink and cooked through, about 4-5 minutes.
- Stir in the lemon juice and half of the sliced green onions into the shrimp mixture.
- Once the grits are done cooking, remove from heat and stir in the butter and shredded cheddar cheese until melted and creamy.
- To serve, spoon the cheesy grits onto plates, top with the shrimp mixture, and sprinkle with the remaining green onions and crispy bacon.
