Ingredients

  • sourdough starter - 120 grams
  • all-purpose flour - 100 grams
  • milk - 150 ml
  • egg - 1 large
  • sugar - 15 grams
  • baking powder - 5 grams
  • salt - 2 grams
  • unsalted butter - 30 grams (melted) plus extra for cooking

Steps

  1. In a mixing bowl, combine the sourdough starter, all-purpose flour, milk, and egg. Mix until well combined.
  2. In another bowl, whisk together the sugar, baking powder, and salt.
  3. Add the dry ingredients to the wet mixture and stir until just combined. Do not overmix; a few lumps are okay.
  4. Fold in the melted butter gently into the batter.
  5. Heat a skillet or griddle over medium heat and add a small amount of butter.
  6. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes.
  7. Flip the pancakes and cook for another 2-3 minutes until golden brown.
  8. Remove from the skillet and keep warm. Repeat with the remaining batter.
