- sourdough starter - 150 grams
- bread flour - 250 grams
- water - 100 milliliters
- honey - 1 tablespoon
- salt - 1 teaspoon
- baking soda - 1 tablespoon
- sesame seeds - for topping
Steps
- In a mixing bowl, combine the sourdough starter, bread flour, honey, and water. Mix until a shaggy dough forms.
- Add the salt and knead the dough on a floured surface for about 10 minutes, or until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise at room temperature for 4-6 hours or until doubled in size.
- Once the dough has risen, punch it down and divide it into 4 equal pieces.
- Shape each piece into a ball, then use your finger to poke a hole in the center and gently stretch it to form a bagel shape.
- Place the shaped bagels on a parchment-lined baking sheet and let them rest for 30 minutes.
- Preheat your oven to 220°C (425°F) during the last 15 minutes of resting.
- Bring a large pot of water to a boil and add the baking soda.
- Boil each bagel for about 1 minute on each side, then remove with a slotted spoon and let drain.
- Place the boiled bagels back on the baking sheet, sprinkle with sesame seeds, and bake for 20-25 minutes or until golden brown.
- Let the bagels cool on a wire rack before serving.
