  • Chicken broth - 500 milliliters
  • Olive oil - 1 tablespoon
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3 minutes until translucent.
  2. Add the minced garlic, diced carrots, and diced celery to the pot. Sauté for another 5 minutes until the vegetables start to soften.
