  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Vegetable broth - 750 ml
  • Canned diced tomatoes - 400 grams
  • Lime juice - 60 ml (about 2 limes)
  • Fresh cilantro - 30 grams, chopped
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Avocado - 1 medium, sliced (for garnish)

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced red onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the diced carrot, celery, and red bell pepper. Cook for 5-7 minutes until the vegetables start to soften.
  4. Add the diced zucchini and cook for an additional 3 minutes.
  5. Pour in the vegetable broth and canned diced tomatoes (with their juice). Stir to combine.
  6. Add the lime juice, cumin, oregano, salt, and black pepper. Bring the mixture to a simmer and let it cook for about 10 minutes.
  7. Remove the pot from heat and stir in the chopped cilantro.
  8. Serve hot, garnished with slices of avocado and additional lime wedges, if desired.
