- Celery - 1 stalk, diced
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Vegetable broth - 750 ml
- Canned diced tomatoes - 400 grams
- Lime juice - 60 ml (about 2 limes)
- Fresh cilantro - 30 grams, chopped
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Avocado - 1 medium, sliced (for garnish)
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced red onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the diced carrot, celery, and red bell pepper. Cook for 5-7 minutes until the vegetables start to soften.
- Add the diced zucchini and cook for an additional 3 minutes.
- Pour in the vegetable broth and canned diced tomatoes (with their juice). Stir to combine.
- Add the lime juice, cumin, oregano, salt, and black pepper. Bring the mixture to a simmer and let it cook for about 10 minutes.
- Remove the pot from heat and stir in the chopped cilantro.
