- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Olive oil - 1 tablespoon
- Lime juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- In a pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the diced carrot and celery to the pot, cooking for another 5 minutes until they soften.
- Stir in the cumin and paprika, cooking for an additional minute to toast the spices.
- Add the cooked black beans and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 15-20 minutes.
- Using a ladle, remove about half of the soup and blend it until smooth, then return it to the pot for a creamier texture.
- Season with lime juice, salt, and black pepper to taste. Simmer for another 5 minutes.
- Serve hot, garnished with fresh cilantro.
