  • Celery - 1 stalk, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  2. Add the diced carrot and celery to the pot, cooking for another 5 minutes until they soften.
  3. Stir in the cumin and paprika, cooking for an additional minute to toast the spices.
  4. Add the cooked black beans and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 15-20 minutes.
  5. Using a ladle, remove about half of the soup and blend it until smooth, then return it to the pot for a creamier texture.
  6. Season with lime juice, salt, and black pepper to taste. Simmer for another 5 minutes.
  7. Serve hot, garnished with fresh cilantro.
