- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Canned diced tomatoes - 400 grams
- Vegetable broth - 500 milliliters
- Fideo noodles - 100 grams
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - for garnish
Steps
- In a medium pot, heat olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic, diced carrot, and diced celery. Cook for an additional 5 minutes until the vegetables begin to soften.
- Add the canned diced tomatoes (with their juice), vegetable broth, cumin, chili powder, salt, and black pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for 10 minutes.
- Add the fideo noodles to the soup and continue to simmer for another 5-7 minutes, or until the noodles are tender.
