  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Canned diced tomatoes - 400 grams
  • Vegetable broth - 500 milliliters
  • Fideo noodles - 100 grams
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - for garnish

Steps

  1. In a medium pot, heat olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
  2. Stir in the minced garlic, diced carrot, and diced celery. Cook for an additional 5 minutes until the vegetables begin to soften.
  3. Add the canned diced tomatoes (with their juice), vegetable broth, cumin, chili powder, salt, and black pepper. Stir well to combine.
