Ingredients

  • Soba noodles - 150 grams
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1 medium, thinly sliced
  • Green onion - 2 stalks, chopped
  • Edamame (shelled) - 100 grams
  • Fresh cilantro - 2 tablespoons, chopped
  • Sesame oil - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Honey - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Salt - to taste

Steps

  1. Bring a pot of water to a boil and cook the soba noodles according to package instructions, usually about 4-6 minutes. Drain and rinse under cold water to cool.
  2. While the noodles are cooking, prepare the vegetables: julienne the cucumber and carrot, thinly slice the red bell pepper, and chop the green onion and cilantro.
