- Soba noodles - 150 grams
- Cucumber - 1 medium, julienned
- Carrot - 1 medium, julienned

- Green onion - 2 stalks, chopped
- Edamame (shelled) - 100 grams
- Fresh cilantro - 2 tablespoons, chopped
- Sesame oil - 2 tablespoons
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Honey - 1 teaspoon
- Sesame seeds - 1 tablespoon
- Salt - to taste
Steps
- Bring a pot of water to a boil and cook the soba noodles according to package instructions, usually about 4-6 minutes. Drain and rinse under cold water to cool.
