- all-purpose flour - 125g
- baking soda - 1/2 tsp
- cream of tartar - 1/2 tsp
- salt - 1/4 tsp
- coconut oil (melted) - 60ml
- brown sugar - 75g
- granulated sugar - 25g
- vanilla extract - 1 tsp
- flaxseed meal - 1 tbsp
- water - 2.5 tbsp
- cinnamon - 1 tsp
Steps
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a small bowl, mix the flaxseed meal with water and set aside for 5 minutes to thicken.
- In a medium bowl, combine the flour, baking soda, cream of tartar, and salt. Whisk together until well combined.
- In another bowl, mix the melted coconut oil, brown sugar, granulated sugar, and vanilla extract. Stir in the flaxseed mixture until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In a small bowl, combine the cinnamon and remaining granulated sugar for the coating.
- Scoop tablespoon-sized portions of the dough, roll them into balls, and then roll each ball in the cinnamon-sugar mixture.
- Place the coated dough balls onto the prepared baking sheet, spacing them about 5cm apart.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
- Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
