Ingredients

  • all-purpose flour - 125g
  • baking soda - 1/2 tsp
  • cream of tartar - 1/2 tsp
  • salt - 1/4 tsp
  • coconut oil (melted) - 60ml
  • brown sugar - 75g
  • granulated sugar - 25g
  • vanilla extract - 1 tsp
  • flaxseed meal - 1 tbsp
  • water - 2.5 tbsp
  • cinnamon - 1 tsp

Steps

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a small bowl, mix the flaxseed meal with water and set aside for 5 minutes to thicken.
  3. In a medium bowl, combine the flour, baking soda, cream of tartar, and salt. Whisk together until well combined.
  4. In another bowl, mix the melted coconut oil, brown sugar, granulated sugar, and vanilla extract. Stir in the flaxseed mixture until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In a small bowl, combine the cinnamon and remaining granulated sugar for the coating.
  7. Scoop tablespoon-sized portions of the dough, roll them into balls, and then roll each ball in the cinnamon-sugar mixture.
  8. Place the coated dough balls onto the prepared baking sheet, spacing them about 5cm apart.
  9. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  10. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
