Ingredients
- Portobello mushrooms - 2 large
- Olive oil - 2 tablespoons
- Smoked paprika - 1 teaspoon
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Balsamic vinegar - 1 tablespoon
- Whole grain burger buns - 2
- Avocado - 1, sliced
- Tomato - 1, sliced
- Lettuce leaves - 2
- Vegan mayonnaise - 2 tablespoons
- Vegan barbecue sauce - 2 tablespoons
Steps
- Preheat your grill or grill pan over medium heat.
- In a small bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper to create a marinade.
- Remove the stems from the portobello mushrooms and place them gill-side up in a shallow dish. Pour the marinade over the mushrooms, ensuring they are well coated, and let them marinate for at least 10 minutes.
- After marinating, drizzle balsamic vinegar over the mushrooms.
- Grill the mushrooms for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
- While the mushrooms are grilling, toast the whole grain burger buns on the grill for 1-2 minutes until lightly golden.
- Assemble the burgers by spreading vegan mayonnaise on the bottom half of each bun, adding the grilled portobello mushroom, slices of avocado, tomato, and lettuce.
- Drizzle vegan barbecue sauce on top, place the top bun, and serve immediately.
