- young green jackfruit - 400 grams, canned in water

- smoked paprika - 1 teaspoon
- cumin - 1 teaspoon
- barbecue sauce - 100 grams
- vegetable broth - 100 ml
- salt - to taste
- black pepper - to taste
- corn tortillas - 4 small
- fresh cilantro - for garnish
- lime - 1, cut into wedges
Steps
- Drain and rinse the canned jackfruit, then shred it using your fingers or a fork into smaller pieces, discarding the core and seeds.
- In a medium skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes or until translucent.
- Add the minced garlic to the skillet and sauté for another 1-2 minutes until fragrant.
- Stir in the shredded jackfruit, smoked paprika, cumin, salt, and black pepper. Cook for another 5 minutes, stirring occasionally.
- Pour in the vegetable broth and barbecue sauce, mixing well to combine. Allow the mixture to simmer for 10-15 minutes, or until the jackfruit is tender and the sauce has thickened slightly.
- While the jackfruit cooks, heat the corn tortillas in a separate skillet over medium heat for about 1-2 minutes on each side until warm and pliable.
- To serve, spoon the smoky jackfruit mixture onto the warmed tortillas, garnish with fresh cilantro, and serve with lime wedges on the side.
