  • young green jackfruit - 400 grams, canned in water
  • olive oil - 1 tablespoon
  • onion - 1 medium, diced
  • garlic - 2 cloves, minced
  • smoked paprika - 1 teaspoon
  • cumin - 1 teaspoon
  • barbecue sauce - 100 grams
  • vegetable broth - 100 ml
  • salt - to taste
  • black pepper - to taste
  • corn tortillas - 4 small
  • fresh cilantro - for garnish
  • lime - 1, cut into wedges

Steps

  1. Drain and rinse the canned jackfruit, then shred it using your fingers or a fork into smaller pieces, discarding the core and seeds.
  2. In a medium skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes or until translucent.
  3. Add the minced garlic to the skillet and sauté for another 1-2 minutes until fragrant.
  4. Stir in the shredded jackfruit, smoked paprika, cumin, salt, and black pepper. Cook for another 5 minutes, stirring occasionally.
  5. Pour in the vegetable broth and barbecue sauce, mixing well to combine. Allow the mixture to simmer for 10-15 minutes, or until the jackfruit is tender and the sauce has thickened slightly.
  6. While the jackfruit cooks, heat the corn tortillas in a separate skillet over medium heat for about 1-2 minutes on each side until warm and pliable.
  7. To serve, spoon the smoky jackfruit mixture onto the warmed tortillas, garnish with fresh cilantro, and serve with lime wedges on the side.
