- bbq sauce - 120 ml (store-bought or homemade)
- whole grain sandwich buns - 2
- coleslaw mix - 1 cup (optional, for serving)
- pickles - for garnish (optional)
Steps
- Heat olive oil in a medium pan over medium heat. Add chopped onion and sauté for 3-4 minutes until translucent.
- Add minced garlic, smoked paprika, cumin, black pepper, and salt to the pan. Stir and cook for another 1-2 minutes until fragrant.
- Add the drained jackfruit to the pan, using a fork to shred the pieces. Stir to combine with the onion and spices.
- Pour the barbecue sauce over the jackfruit mixture, stir well, and reduce heat to low. Let it simmer for 10-15 minutes, stirring occasionally, until the jackfruit is tender and well-coated in the sauce.
- While the jackfruit is cooking, toast the sandwich buns in a toaster or on a pan until golden brown.
