  • Whole wheat pizza dough - 200 grams

  • Chipotle peppers in adobo sauce - 2 pieces, finely chopped

  • Crushed tomatoes - 200 grams
  • Mozzarella cheese, part-skim - 100 grams, shredded
  • Red onion - 50 grams, thinly sliced
  • Bell pepper (any color) - 50 grams, thinly sliced
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, cut into wedges
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 220°C (425°F).
  2. In a pan, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  3. Add the crushed tomatoes and chopped chipotle peppers to the pan, season with salt and black pepper, and let simmer for 5 minutes.
  4. Roll out the whole wheat pizza dough on a floured surface to your desired thickness.
  5. Transfer the rolled-out dough to a baking sheet lined with parchment paper.
  6. Spread the chipotle tomato sauce evenly over the pizza base.
  7. Sprinkle the shredded mozzarella cheese on top of the sauce.
  8. Distribute the sliced red onion and bell pepper evenly over the cheese.
  9. Bake the pizza in the preheated oven for about 12-15 minutes, or until the crust is golden and the cheese is bubbly.
  10. Remove the pizza from the oven, let it cool for a couple of minutes, then garnish with chopped cilantro and serve with lime wedges.
