Ingredients

  • Beetroot - 200 grams, cooked and peeled
  • Black beans - 1 cup, drained and rinsed
  • Breadcrumbs - 1/2 cup
  • Red onion - 1/4 cup, finely chopped
  • Garlic - 2 cloves, minced
  • Smoked paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon, for cooking
  • Whole grain burger buns - 2
  • Avocado - 1, sliced
  • Lettuce - 2 leaves
  • Tomato - 1, sliced
  • Vegan mayo - 2 tablespoons

Steps

  1. Preheat your grill or skillet over medium heat.
  2. In a mixing bowl, mash the cooked beetroot and black beans together until well combined but still a bit chunky.
  3. Add the breadcrumbs, chopped red onion, minced garlic, smoked paprika, cumin, salt, and black pepper to the bowl, and mix until everything is evenly incorporated.
  4. Shape the mixture into two patties, ensuring they hold together well.
  5. Heat the olive oil in the grill or skillet, and cook the patties for about 5-7 minutes on each side, or until they're crispy and heated through.
  6. While the patties are cooking, toast the burger buns lightly on the grill.
  7. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the beet patty, tomato slice, avocado, and a smear of vegan mayo.
  8. Top with the other half of the bun and serve immediately.
