Ingredients

  • Cauliflower - 1 medium head, cut into florets
  • Olive oil - 2 tablespoons
  • Smoky paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • BBQ sauce (dairy-free) - 1/2 cup
  • Corn tortillas - 4 small
  • Cilantro - 1/4 cup, chopped
  • Lime - 1, cut into wedges

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a large mixing bowl, combine the cauliflower florets with olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. Toss well to coat evenly.
  3. Spread the seasoned cauliflower on a baking sheet in a single layer and roast in the preheated oven for 20 minutes, or until golden and tender.
  4. Remove the cauliflower from the oven and drizzle the BBQ sauce over it, tossing gently to coat the florets evenly with the sauce.
  5. Return the baking sheet to the oven and roast for an additional 5 minutes until the BBQ sauce is heated through.
  6. While the cauliflower is roasting, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.
  7. To assemble the tacos, place a generous amount of the smoky BBQ cauliflower in each tortilla, top with chopped cilantro, and serve with lime wedges on the side.
