- Cauliflower - 1 medium head, cut into florets
- Olive oil - 2 tablespoons
- Smoky paprika - 1 teaspoon
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- BBQ sauce (dairy-free) - 1/2 cup
- Corn tortillas - 4 small
- Cilantro - 1/4 cup, chopped
- Lime - 1, cut into wedges
Steps
- Preheat the oven to 220°C (425°F).
- In a large mixing bowl, combine the cauliflower florets with olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. Toss well to coat evenly.
- Spread the seasoned cauliflower on a baking sheet in a single layer and roast in the preheated oven for 20 minutes, or until golden and tender.
- Remove the cauliflower from the oven and drizzle the BBQ sauce over it, tossing gently to coat the florets evenly with the sauce.
- Return the baking sheet to the oven and roast for an additional 5 minutes until the BBQ sauce is heated through.
- While the cauliflower is roasting, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.
- To assemble the tacos, place a generous amount of the smoky BBQ cauliflower in each tortilla, top with chopped cilantro, and serve with lime wedges on the side.
