Ingredients

  • Turkey legs - 2 large (about 1 kg total)
  • Olive oil - 2 tablespoons
  • Smoked paprika - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Brown sugar - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Apple cider vinegar - 2 tablespoons
  • Water - 1 liter

Steps

  1. In a bowl, mix olive oil, smoked paprika, garlic powder, onion powder, brown sugar, salt, black pepper, and apple cider vinegar to create a marinade.
  2. Rub the marinade all over the turkey legs, ensuring they are evenly coated. Cover and let marinate in the refrigerator for at least 1 hour, preferably overnight.
  3. Preheat your smoker to 120°C (250°F). If you don’t have a smoker, you can set your grill to indirect heat.
  4. Once preheated, place the marinated turkey legs on the smoker or grill, and smoke for about 2 to 2.5 hours, or until the internal temperature reaches 75°C (165°F).
  5. During the last 30 minutes of smoking, periodically baste the turkey legs with leftover marinade to enhance the flavor.
  6. Remove the turkey legs from the smoker and let them rest for 10 minutes before serving.
