Ingredients

  • 2 large bell peppers - any color
  • 250 grams ground beef (or turkey)
  • 100 grams cooked rice
  • 1 small onion - diced
  • 2 cloves garlic - minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 cup diced tomatoes (canned or fresh)
  • 1 tablespoon olive oil
  • 1/4 cup shredded mozzarella cheese (optional)
  • Fresh parsley - for garnish

Steps

  1. Preheat your smoker to 120°C (250°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes, setting the tops aside.
  3. In a skillet over medium heat, heat the olive oil and sauté the diced onion until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute.
  4. In a large bowl, combine the ground beef, cooked rice, sautéed onion and garlic, smoked paprika, cumin, kosher salt, black pepper, and diced tomatoes. Mix until well combined.
  5. Stuff each bell pepper with the beef and rice mixture, pressing down gently to pack it in. If desired, top with shredded mozzarella cheese.
  6. Place the stuffed peppers in the smoker and smoke for about 45 minutes, or until the peppers are tender and the meat is cooked through.
  7. Remove from the smoker and let cool for a few minutes. Garnish with fresh parsley and serve.
