Ingredients
- 2 large bell peppers - any color
- 250 grams ground beef (or turkey)
- 100 grams cooked rice
- 1 small onion - diced
- 2 cloves garlic - minced
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 cup diced tomatoes (canned or fresh)
- 1 tablespoon olive oil
- 1/4 cup shredded mozzarella cheese (optional)
- Fresh parsley - for garnish
Steps
- Preheat your smoker to 120°C (250°F).
- Cut the tops off the bell peppers and remove the seeds and membranes, setting the tops aside.
- In a skillet over medium heat, heat the olive oil and sauté the diced onion until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute.
- In a large bowl, combine the ground beef, cooked rice, sautéed onion and garlic, smoked paprika, cumin, kosher salt, black pepper, and diced tomatoes. Mix until well combined.
- Stuff each bell pepper with the beef and rice mixture, pressing down gently to pack it in. If desired, top with shredded mozzarella cheese.
- Place the stuffed peppers in the smoker and smoke for about 45 minutes, or until the peppers are tender and the meat is cooked through.
- Remove from the smoker and let cool for a few minutes. Garnish with fresh parsley and serve.
