Ingredients

  • Pork loin - 500 grams
  • Smoked paprika - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Apple cider vinegar - 1 tablespoon
  • Mustard - 1 tablespoon
  • Liquid smoke - 1 teaspoon
  • Fresh rosemary - 2 sprigs

Steps

  1. In a small bowl, mix the smoked paprika, garlic powder, onion powder, salt, and black pepper.
  2. Rub the spice mixture all over the pork loin, ensuring an even coating.
  3. In another bowl, whisk together olive oil, apple cider vinegar, mustard, and liquid smoke.
  4. Place the pork loin in a large resealable bag and pour the marinade over it, seal the bag, and marinate in the refrigerator for at least 2 hours or overnight for better flavor.
  5. Preheat your smoker to 110°C (225°F) and add your choice of wood chips for smoking.
  6. Remove the pork loin from the marinade and let it come to room temperature for about 30 minutes.
  7. Place the pork loin in the smoker and add fresh rosemary on top.
  8. Smoke the pork loin for about 2-2.5 hours, or until the internal temperature reaches 63°C (145°F).
  9. Remove the pork loin from the smoker and let it rest for 10-15 minutes before slicing.
  10. Serve with your favorite low-carb BBQ sides.
