- Apple cider vinegar - 1 tablespoon
- Mustard - 1 tablespoon
- Liquid smoke - 1 teaspoon
- Fresh rosemary - 2 sprigs
Steps
- In a small bowl, mix the smoked paprika, garlic powder, onion powder, salt, and black pepper.
- Rub the spice mixture all over the pork loin, ensuring an even coating.
- In another bowl, whisk together olive oil, apple cider vinegar, mustard, and liquid smoke.
- Place the pork loin in a large resealable bag and pour the marinade over it, seal the bag, and marinate in the refrigerator for at least 2 hours or overnight for better flavor.
- Preheat your smoker to 110°C (225°F) and add your choice of wood chips for smoking.
- Remove the pork loin from the marinade and let it come to room temperature for about 30 minutes.
- Place the pork loin in the smoker and add fresh rosemary on top.
- Smoke the pork loin for about 2-2.5 hours, or until the internal temperature reaches 63°C (145°F).
- Remove the pork loin from the smoker and let it rest for 10-15 minutes before slicing.
