- Pork chops - 2 (each about 200g)
- Olive oil - 1 tablespoon
- Brown sugar - 1 tablespoon
- Smoked paprika - 1 teaspoon
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Ground black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Apple juice - 1/4 cup
- Wood chips (hickory or apple) - 1 cup (for smoking)
Steps
- In a small bowl, mix together the brown sugar, smoked paprika, garlic powder, onion powder, black pepper, and salt to create a dry rub.
- Pat the pork chops dry with paper towels and rub them generously with olive oil, then coat both sides of the chops with the dry rub, ensuring even coverage.
- Place the seasoned pork chops in a resealable plastic bag and pour in the apple juice. Seal the bag and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat your smoker to 110-120°C (225-250°F). Soak the wood chips in water for about 30 minutes, then drain them.
- Place the soaked wood chips in the smoker box or directly on the coals if using a charcoal grill.
- Remove the pork chops from the marinade and let any excess juice drip off. Place them on the smoker rack.
- Smoke the pork chops for about 1 hour, or until the internal temperature reaches 63°C (145°F), turning them halfway through for even cooking.
- Once done, remove the chops from the smoker and let them rest for 5-10 minutes before serving.
