Ingredients

  • beef brisket - 500 grams
  • kosher salt - 50 grams
  • black pepper - 15 grams
  • coriander seeds - 10 grams, crushed
  • paprika - 5 grams
  • brown sugar - 10 grams
  • garlic powder - 5 grams
  • onion powder - 5 grams
  • liquid smoke - 5 ml
  • rye bread - 4 slices
  • yellow mustard - 60 grams
  • dill pickles - 100 grams, sliced
  • smoking wood chips (hickory or apple) - 200 grams

Steps

  1. In a small bowl, mix kosher salt, black pepper, crushed coriander seeds, paprika, brown sugar, garlic powder, and onion powder to create the spice rub.
  2. Rub the spice mixture all over the beef brisket, ensuring it's evenly coated, and wrap in plastic wrap. Refrigerate for at least 5 days to cure.
  3. After curing, rinse the brisket under cold water to remove excess salt and spices. Pat dry with paper towels.
  4. Preheat your smoker to 110°C (225°F) and soak the wood chips in water for 30 minutes before use.
  5. Place the brisket in the smoker and add the drained wood chips. Smoke for approximately 5 hours, or until the internal temperature reaches 90°C (195°F).
  6. Remove the brisket from the smoker and let it rest for 30 minutes before slicing.
  7. While resting, prepare your sandwich by toasting the rye bread lightly.
  8. Slice the pastrami thinly against the grain and layer it generously on two slices of toasted rye bread.
  9. Spread yellow mustard on the remaining two slices of bread and top with sliced dill pickles.
  10. Assemble the sandwiches, cut in half, and serve immediately.
