Ingredients

  • Lamb chops - 4 pieces (about 200g each)
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Dried rosemary - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Wood chips (hickory or mesquite) - 1 cup

Steps

  1. In a small bowl, mix the olive oil, garlic powder, smoked paprika, dried rosemary, black pepper, salt, and lemon juice to create a marinade.
  2. Coat the lamb chops with the marinade, ensuring they are well-covered, and let them marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.
  3. While the lamb chops are marinating, soak the wood chips in water for about 30 minutes.
  4. Preheat your smoker or grill to medium-high heat, around 180-200°C (350-400°F).
  5. Once the wood chips are ready, drain them and add them to the smoker box or directly on the coals if using a charcoal grill.
  6. Place the marinated lamb chops on the grill grates and smoke them for about 20-25 minutes, flipping halfway through, until they reach an internal temperature of 60°C (140°F) for medium-rare.
  7. Remove the lamb chops from the grill and let them rest for about 5 minutes before serving.
