- Smoked paprika - 1 teaspoon
- Dried rosemary - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Lemon juice - 1 tablespoon
- Wood chips (hickory or mesquite) - 1 cup
Steps
- In a small bowl, mix the olive oil, garlic powder, smoked paprika, dried rosemary, black pepper, salt, and lemon juice to create a marinade.
- Coat the lamb chops with the marinade, ensuring they are well-covered, and let them marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.
- While the lamb chops are marinating, soak the wood chips in water for about 30 minutes.
- Preheat your smoker or grill to medium-high heat, around 180-200°C (350-400°F).
- Once the wood chips are ready, drain them and add them to the smoker box or directly on the coals if using a charcoal grill.
- Place the marinated lamb chops on the grill grates and smoke them for about 20-25 minutes, flipping halfway through, until they reach an internal temperature of 60°C (140°F) for medium-rare.
- Remove the lamb chops from the grill and let them rest for about 5 minutes before serving.
